Whole30-Approved Buffalo Chicken Bake {Recipe}

I’ve never been a spicy food person. To me, it seems like adding hot sauce to food takes away from or covers up the flavor, so there is really no point in adding it to something unless you don’t actually like the flavor of it. This all changed when I tried this Buffalo Chicken Casserole from PaleoOMG during my first round of Whole30. This casserole is so good and has so much flavor, and the hot sauce actually doesn’t overwhelm the other ingredients in the casserole. I started experimenting with hot sauce in my own recipes, and that, paired with my obsession with rotisserie chicken, turned into this incredibly easy buffalo chicken casserole. It is the perfect mix of textures and proteins, carbs, and fats that will leave you satisfied and nourished, without skipping out on flavor! Plus, it takes less than an hour start to finish, so there’s really no excuse to not make it. Enjoy!


Whole30-Approved Buffalo Chicken Casserole


  • 1 large head of cauliflower
  • 2 small or medium sweet potatoes (I use Japanese)
  • 4 cups chopped cooked chicken (I use rotisserie chicken)
  • 3/4 cup hot sauce
  • 1/2 up Whole30-approved mayo (such as this one)
  • 1/2 cup almond meal
  • 1/2 tsp. garlic powder
  • salt and pepper to taste
  • Parsley or green onions for garnish


  1. Preheat oven 350°
  2. Chop the cauliflower into small florets and the sweet potatoes into 1 inch pieces
  3. Add veggies to a large pot with about 2 inches of water and steam over medium heat, with lid, for 5-10 minutes, or until veggies are fork tender
  4. Once tender, add veggies to a large bowl with the chicken, mayo, hot sauce, almond meal, garlic powder, and salt and pepper to taste and stir to combine
  5. Add to a large casserole dish and bake in the oven for 20 minutes, or until slightly brown on top
  6. Garnish with chopped parsley or green onions and dig in!
